A supermarket is putting new meaning into the term ‘fresh food’ – with a farm operating in the store.
The innovative idea cuts out food miles and uses 99% less water to grow seeds into nutritiously rich vegetables.
The farm provides staples including various types of lettuce, plus herbs such as dill, coriander, mint, thyme, basil and parsley.
Over the course of a few weeks, the produce goes from seeds to products available – which customers can pick truly fresh from the shelf.
The farm supermarkets are run by Swegreen, an agriculture technology company, who aim to grow premium greens on site.
The company currently has stores in Sweden and Germany with each farm being adaptable for the supermarket’s size.
The farms do require more energy consumption, however the LED lights used to grow the produce are extremely efficient, with the total carbon emissions also being slashed.
This is down to the farms not needing to transport the veggies as they are grown on site.
Ben Brown and Ciara Doyle, co-founders of Going Green Media, have been shedding light on these fantastic locations.
The duo told What’s The Jam: “This is a great solution for crops that have a short shelf-life like lettuce, herbs, and greens.
“They are also testing out strawberries, microgreens and chillies, which would be awesome to have year-round but more sustainably.
“Within weeks the veggies go from seed, to fully grown plants and are then ready to be picked from the supermarket shelves.
“Of course this model can’t grow everything, and we don’t want it to replace small independent farms.

Švedska tvrtka gradi farme unutar supermarketa kao ekološki prihvatljivo rješenje za uzgoj voća i povrća.

Rješenje iz SweGreena, koje već postoji u Švedskoj i Njemačkoj, način je odgovora na nestašicu vode, nedostatak poljoprivrednog zemljišta i ovisnost o globalnoj geopolitici.

Lokalni uzgoj zelja također će smanjiti emisije iz prometa, produžiti rok trajanja i poboljšati njihov okus.

Ovo rješenje za uzgoj u trgovini koristi hidroponsku metodu, gdje se biljke uzgajaju u čepovima od kamene vune u vodi bez zemlje, piše Euronews.

Platforma za uzgoj

Svaka platforma za uzgoj može uzgojiti ekvivalentnu količinu hrane za najviše tri hektara poljoprivrednog zemljišta.

Kupci mogu vidjeti kako zelje raste i bere se pred njihovim očima da bi ga potom pokupili s police.

Supermarketi, na primjer, imaju pekare. Ali sada uzgajaju hranu umjesto da peku’, kaže glavni direktor za inovacije i voditelj SweGreen X, Sepehr Mousavi.

Trenutno SweGreen može uzgajati do 100 različitih vrsta usjeva, uključujući salatu, kopar, metvicu i peršin.

‘U naš portfelj dodajemo mikrozelenje, testiramo plodonosne biljke, a gledamo i jagode’, dodaje Sepehr.

Kako umjetna inteligencija pomaže SweGreenovim vertikalnim farmama?

Neke potrošačke trendove lako je uočiti. ‘Tijekom ljetnih festivala, jedina stvar koju prodajete u Švedskoj je kopar. A onda će tijekom ljetnih festivala biti menta, na primjer’, kaže Sepehr.

Imamo AI alat koji daje recept za rast našim uzgajivačima tako da ljudi koji rade u supermarketu dobiju popis obaveza koji im osigurava točno one proizvode koji su potrebni tog dana.’

Ovisno o veličini supermarketa i njegovim potrebama, klijenti SweGreena također mogu birati između usjeva od 45 četvornih metara koji imaju kapacitet od 300 usjeva dnevno i manjeg usjeva koji može ići do 12 četvornih metara i rasti maksimalno 116 usjeva dnevno.

Premještanje farme u različite krajolike

Supermarketi nisu jedini koji na lokalnoj razini traže ekološki prihvatljiva rješenja – u igru ​​se žele uključiti i restorani, hoteli, sveučilišta i vlasnici nekretnina.

Fotografiska Stockholm, suvremeni muzej fotografije, umjetnosti i kulture, usvojio je ovo rješenje za fino objedovanje u svom restoranu kako bi jelovnik ostao sezonski i održiv.
